You don't need a cathedral to achieve the grandeur. Lots of awesome bush settings to be found in the Shoalhaven.
Rural and rustic. You don't get any more rustic than the families pet goat sashaying down the aisle as you're about to exchange your weddings vows.
Vineyard Vows. So many great wineries on the south coast, all of them offering intoxicating views and atmosphere.

Bayside. It's a bit of a secret but Callala Bay and Beach offer some of the most stunning beach locations on the south coast.
